Apple and Almond Cake: A Balanced Treat for Pilates Enthusiasts

  • Sugar-free and gluten-free, ideal for a balanced diet

Ingredients for 4 Servings

  • 50 g coconut oil
  • 50 g xylitol
  • 50 g organic soy flour
  • 1/2 teaspoon baking powder
  • 50 g ground almonds
  • 50 g flaked almonds, plus 1 tablespoon for topping
  • 150 g peeled and diced apples
  • 2 eggs

Preparation

1. Prepare the baking tin and oven

  • Preheat the oven to 180°C (350°F).
  • Line a 10 cm baking tin with parchment paper.

2. Prepare the batter

  • In a bowl, mix the coconut oil and xylitol until smooth and creamy.
  • Add the soy flour, baking powder, and ground almonds, mixing until the texture resembles breadcrumbs.

3. Add the main ingredients

  • Stir in 50 g of flaked almonds and the diced apples.
  • Gently incorporate the eggs without over-mixing.

4. Bake the cake

  • Pour the mixture into the baking tin and sprinkle the remaining flaked almonds on top.
  • Bake for 25 minutes, until golden brown on top.
  • Cover the cake with aluminum foil and bake for an additional 20 minutes.
  • Insert a toothpick in the center; if it comes out clean, the cake is ready.

5. Serve and enjoy

  • Let the cake cool slightly before serving. Perfect for breakfast or as a post-workout snack.
