Coconut & Lime Chicken Bites with Oven-Baked Zucchini

Ingredients (Serves 2)
- 2 large egg whites
- 1 tbsp fresh lime juice
- 6 tbsp finely shredded unsweetened coconut
- 240 g boneless, skinless chicken breast
- 1 medium zucchini
- 1 tbsp extra virgin olive oil
Instructions
1. Prepare the baking trays: Line two baking trays with parchment paper and preheat the oven to 180°C (350°F).
2. Prepare the chicken:
- In a small bowl, lightly beat the egg whites with lime juice.
- Place the shredded coconut in a separate bowl.
- Dip the chicken bites into the egg-lime mixture, then roll them in the shredded coconut for a perfectly crispy coating.
- Arrange the coated chicken pieces on the prepared baking tray.
3. Prepare the zucchini:
- Slice the zucchini into rounds and place them on the second baking tray.
- Brush the slices with extra virgin olive oil.
4. Baking:
- Bake both the chicken and zucchini for 25-30 minutes, turning them occasionally for even browning.
5. Serve and enjoy!
