Smoked Salmon & Feta Omelette: The Perfect Meal for Pilates Enthusiasts

Ingredients for 1 Serving
- 2 eggs
- 30 g smoked salmon
- 40 g feta cheese
- 1 handful of baby spinach
- 1 handful of arugula
- 1 tbsp extra virgin olive oil
Preparation
1. Prepare the ingredients:
- Crack the eggs into a bowl and whisk them lightly with a fork.
- Slice the smoked salmon into strips and crumble the feta into the bowl.
2. Cook the spinach:
- Heat the extra virgin olive oil in a non-stick pan over medium-high heat.
- Add the spinach and stir until wilted.
3. Cook the omelet:
- Pour the egg mixture into the pan and stir gently.
- Once the eggs are semi-cooked, stop stirring and let the omelet set for about 1 minute, until the surface is firm.
4. Serve and enjoy!
